To celebrate finale week on Masterchef 2019, we were thrilled that one of the most loved contestants this year, Sandeep Pandit wanted to share one of his favourite saffron recipes with us, using our very own saffron! So here it is!
Ingredients
150gms Plain flour
10gms Baking powder
25gms Brown sugar
25gms Castor sugar
100gms Butter
1 Egg
10 strands of Argyle Australian Saffron
2 Cardamon pods
A pinch of salt
Instructions
Preheat your oven to 180 degrees celcius
Cream your butter and sugar well so it is light and fluffy
Add the egg to the butter and sugar and mix well to combine
Meanwhile, crush your cardamon pod with your saffron strands, and a pinch of salt.
In a large bowl combine your flour and baking powder, then add in the saffron and cardamon mix through
Now add your flour mixture to the butter and sugar mix and combine well
Roll into 5cm balls and flatten slightly onto a baking tray lined with baking paper
Bake for 10-12 minutes
These biscuits are delicious and easy to make. But one vital ingredient is missing from the recipe - butter!
Add 125gms of softened butter. Not sure if this is correct but it worked!
I'd also suggest 4 cardamon pods for a stronger flavour.
